We are beginning to feed our dogs a raw, healthier diet. We've purchased two books from Leerbug. We're beginning to feed with the Healthy Kitchen veggie stuff, and chicken, beef ribs, organ and muscle meat.
Our question is "how much do we feed our dogs"?
Bosco is an approx 100 lb Lab mix, in very good shape and not overweight. I walk Bosco twice a day, relatively aggressive walking.
Layla is our Lab mix 9 month old, possibly 30 lbs. She gets her two walks and exercise in the back yard as well.
Is there a relative percentage rule we should follow regarding their weight and how much to feed?

You must detail for us how you are doing the THK.
Are you using it as directed or are you feeding a raw diet, mainly, with a THK "gravy" as the produce?
There are definitely % guidelines (2 or 2.5% of the dog's weight is a good starter for raw), but it's different for commercial products.
As for backs and necks, you can start with a supermarket or butcher and ask. Many have them for stock. any will order, too, if it's a guaranteed amount. Do you have a freezer?

We are phasing in the THK and phasing out the kibble; basically 50/50 right now. Bosco gets a chicken quarter, Layla gets a leg. I have read that our pup (9 mos. old) should get 10% of her body weight a day. She weighs about 30 lbs. Comments?
Eventually we won't use the THK but will purchase broccoli and carrots and then pulp them in a blender.
I know this is going to be a (fun) ongoing process. I've already read _not_ to feed veggies; that canines wouldn't "normally" eat them in the wild. So, we'll see how the pooches respond. So far, Layla, the pup, will eat anything!

What I mean is, do you plan to feed a raw diet with THK side? Or THK with meat added as per THK directions?
Adults (for raw) - about 2 or 2.5% for many; some 3%.
Puppies - (for raw) about 5 to 10%. I'd start with 5 or 6% and see.
In all cases, the appearance of the dog is the deciding factor. If the dog's weight belies the directions, believe the dog.
P.S. Which book said no produce? I disagree. Strongly.
It's a very small part of the diet for canids, but it's not zero.

We are going to use up the THK (we purchased one box) and then we'll make our own "blend" from veggies like broccoli, carrots, kale, chard, etc.
With regards to "puppies", Layla's 9 months old. Is there a point where she's no longer a "puppy"? She definitely has some growing to do, that's for sure.
