I couldn't get a 40lb box of backs this week so I had to settle for necks and that's going to be fed along with ground chicken/ground turkey with bone. I won't be able to get backs for another week. The necks have a lot of skin around them so should I peel the majority of it off or feed as is and evaluate the tolerance? I've only given necks occasionally and haven't had to use them as much as I will in the coming week.

Have you been giving backs with the skin on? They are used to the skin?
I would probably peel off the skin for a few days, gradually starting to leave on part, etc., until it was all left on, but I have a senior in the herd whose digestive system needs a little babying (mainly just gradual additions of anything new and fatty).
I typically peel the skin away and remove the bigger fat globs off the backs so I'll get the skin off those necks for the first few days like you suggested then gradually add it in.
