I've always taken a dogs (and especially a pups) antics as a cue that what they are really asking for is more work/interaction. So I give it to them, more sits (yeah yeah), more downs (yeah yeah), more touches (yeah yeah). Sometimes I'll start something new for the dog if the opportunity presents it's self.
For myself, I've never found turning my back to be very helpful or instructive for the dog.
If my dog isn't learning, I'm doing something wrong.

NEVER teach or encourage a behaviour you do not want to deal with.
For example, I never train my dogs to "shake" or "paw" because I do not want them ever putting their (sometimes muddy) feet on me. I don't want them pawing at me every time they want something. I had one foster I trained to "speak" and the adopter sure didn't appreciate that one either, LOL. I always train the touch command with objects in their reach. (they NEVER touch an object that is on a table, even coffee table, for example). The object is on the floor or in my hand within nose height.
