What would be the drawbacks of extracting the tooth for a police K9?
The canines are very securely anchored in the jaw and there is a good chance of breaking the jaw in the process of getting the tooth out.
Not to mention that the perps would have the potential of missing out on one puncture mark/bruise.

Michael, check out this x-ray image (never mind the notations) - it shows pretty clearly how the thick upper canine roots reach right up towards the top of the muzzle, along the nasal cavity. There's a LOT of anchor there, which makes sense if you think about the amount of force those particular teeth have to sustain in order to bring down prey...
Here's another view, from an anatomical dentistry model (Oscar's dentists had one of these and it was pretty cool to see through the bone and into the entire teeth structures, as she was describing Oscar's root canal) - I'm going to put one of these on my x-mas list one day!
