Kevin, could you enforce a rule that your dog is NEVER out of the crate when you are not home? In other words...your mother will not have the opportunity to break your dog/baby rules b/c the dog won't be accessible. That's the only way "out" of this that I can see. You acknowledge the dog has issues w/kids. Who knows if you could work w/her on them or not. Regardless, you can keep a baby safe by practicing simple separation...IF you are the only one to decide when/where the dog is at all times.
Show your mom pretty pictures of kids who have been attacked by dogs...that should be enough to upset any grandma enough to listen to you about leaving Nala crated. JMO.
