I think the vet was prescribing a soothing bland food rather than a binding food. Can't hurt, usually, IMO, to do what you can to soothe the GI system.
Pumpkin, though, along with plenty of water, can help with constipation as well as diarrhea (by adding bulk).
But the thing is, is this constipation or blockage?

Well, that sounds promising, then. I'd be watching the poops really carefully, even keeping a record on a piece of paper. (I started to write "keep a log," but it seemed confusing. )
I'd want to see poops of the approximate size they normally were, and also look for mucus, blood, etc. I'd call the vet back if there was any going backwards (more liquid-y, smaller, less shape, straining).
Of course, this is only what I'd probably do, and nothing authoritative. You know your dog best and you will want to be alert for signs of distress, lethargy, discomfort, etc.
