I agree that in the black part of my area, there is much more variety in organ meat and bargain cuts than I find in the local big chain grocer. Asian delis also can have some organs and bones for soup stock at a good price. I once looked at a can of pork brain considering to add it to the mix. The cholesterol was something like 1000% of recommended daily dosage. I don't remember the exact panel, but to memory sodium and cholesterol levels were super high, so I passed. I often wonder how much *ideal* food/organ supplements are thrown in the dumpster at grocery stores where Ol' Roy is bought up by the sackful!

Chip. Sadly enough that is the truth. Things that I probably won't eat, are at the butcher shop in that area, and it has been there since I was a private, thirty six years ago. Anyway, I will talk to the butcher and see if I can come up with some duck and RMB that fit the bill for my Chico.
