The ability to write off my cosmetics purchases and trips to hairshows lost its luster a long time ago. Writing off a Michael Ellis class or seminar would be way more fun.
If you've got a business and working toward becoming a trainer you can attend training yourself as part of your business - those 2-3 weeks of Michael Ellis become a business expense!!!

Could you maybe meet with some of the walkers already in business and maybe apprentice under one of those that has to turn people away? Then as you get to know the business, you can slowly break off on your own and take those clients with you? I know there is a company that started that way, and they now hire dog walkers that either work under them or subcontract for them, and it's a huge business. Might be a good way to start.
