The thing I have to always keep in mind is the reason that I have the Pinker, and not a real dog, is that supposedly we are going to sell the farm and move to someplace not Siberia, where we might see our sons. Plus, is it fair to have a farm dog if you are over 60? Am I going to see 75? Not likely.
OTOH, farms are hard to sell (houses are hard to sell), hubby loves his work, and I haven't seen any real move toward leaving here......
Those are good things to consider. Far too many people don't and the dog pays the price.
Personally, if I could care for a dog and had a job for it, I'd have no qualms about getting one. Of course I would have a plan B lined up if something happened I could no longer care for the dog (but that is a good idea no matter what your age).
In a situation like that I'd most likely consider an older dog. At 7-8 it would have 3-4 good working years left if you're just doing moderate farm work. And if you did up and sell the farm next year the dog could probably adjust pretty well to being a moderately active pet.
