You're sure it's skunk breath and not very bad breath that perhaps wasn't noticed before, right? Just on the off-chance that something else was already going on .... and maybe got mixed up with the skunk run-in ... http://pets.webmd.com/dogs/guide/bad-breath-dogs
But I'm sure you know skunk breath when you smell it.

I was kind of thinking along the same lines as Connie. Are you sure it's his breath?
Echo got it a few months back and his face just reaked, so did our house for a couple of days (skunk got under the porch somehow and let fly). His head was the worst and of course the hardest to clean, trying to avoid any sensitive areas.
Maybe there's a bit left on his muzzle that might be coming across as his breath.
I can't see it lasting that long inside their actual mouth. Lots of water to wash it off his tongue maybe.
Maybe some fresh tripe would clear it up. As strange as it sounds, my boys always smell fresh a few hours after they eat it.
Have no idea if it works, just a thought.
I feel for ya, it's one of the worst smells. YUCK is right.
Mint and lots of water and hard food did help.
Now the barn still smell but Dexter is much better. He is closing his mouth and his eyes are not tearing any more.
Does the dog wear a leather collar? That can absorb a lot of smell. Even if it gets cleaned it will stink again when it gets wet.
You also said the dog bit the skunk. There is no incubation period for rabies with a skunk. The can be a carrier for more then a year before they show signs. Even if your dog is up to date on rabies shots I would check with your vet for safety sake.
