With your new, better understanding and big time trainer, ask him why you would stop as soon as she shows any aversion? To me, that sounds like either a problem in the training, you're teaching her to avoid and that will make it stop, or maybe, that's why she's not the right dog for what your doing?
I agree. I didn't catch it before, but it sure sounds like you're stopping the dog at just the point where it has to decide if it's going to defend itself (if working in defense), or bite the prey (if working in prey drive). You may be removing the pressure just before the point that the pressure is supposed to take the dog. Unless, of course, the dog has already gone into avoidance, in which case the dog is not suited for bitework.
