Sarah, we are well on our way in the exercise department this boy does around 10-20km a day with me, which is exactly what I needed him for with many more km's to go! I was more worried about the legs as we usually start biking at this time of the year, and with him not running, I wasn't sure if it would be right. To expect him to come with me, as the only way at his pace that he could would have to be off leash, which is a bit iffy for us as he would be safer on leash in case the loose dogs decide to go at us.
For your dog I would try and alternate with easy agility exercises to help develop a bit more dexterity.
Exercise with a dog is no different then with a human.
Staying with one particular exercise/motion will definitely benefit those muscles that are used for a particular exercise but doing a bit of cross training will help the overall dog or human.
Back chaining a retrieve could help all around developement.
