I do exactly the same thing every evening with the boyz. We go out on the property and walk around. I keep them going in the direction I want by saying, every once in a while, Hey, this way dummy. Its amazing. . .I can guide the dogs off-lead in a general direction that I'm going. . .without error. We manage to get to the pond, swim, walk up the hill, check the back fence, walk around the wood, and meandor back to the house. . .all off-lead with only a few voice commands or corrections.
I could call it tracking if I wanted to. You know, I could walk the route before I take them out and then set them on the track and we could then take our walk. I could even leave some things sitting around on the way. . .they'll find some of them?

Are you trying to tell me that when they find an article they are not supposed to grab it run around come back to you and play bow??? No wonder I have been having a hard time with this tracking/walk thing.
