Isn't fat digested as a protein? It isn't broken down as any type of sugar, whether it is a canine or human metabolism...which would then make it a carb if it was. So if it isn't protein, what is it? ( referring to fat)
As for the water content of meat, I think it is pretty negligable in the big picture of things.I would not worry about the water content when figuring what to give my dog.
BTW, I do not feed a total raw diet( due to lifestyle issues), but do supplement with raw.

Meat is much more than 10% fat. Unless you are buying lean cuts and lean ground (which is expensive) beef can have anything from 30-60% fat. Even turkey has at least 20%, unless you go for just the breast, no fat, no skin. And since a raw diet incorporates bone, too, some dogs on raw probably get 40-50% protein. Of course it all depends on what kind of meat and what cuts you give.
Fat is not digested as a protein or a carbohydrate. Fat metabolism is a specific pathway involving bile and occurs in the small intestine. Protein digestion occurs in the stomach and is very different.
My dog got about 35% protein as a puppy. The general standards that the dog food industry must follow is a bit less than 30% protein for puppies. But remember, they can get away with these proteins being from PLANTS (Corn, soy, etc.) which are often not complete proteins and will not help your puppy at all. So if you are feeding kibble get one with purely animal proteins, at about 30%.
