Hi Mike,
No dietary suggestions, but just wanted to "greet" your new rescue<g>. She sounds like a lot of fun. She sure won the rescue lotto...
I don't really have any constructive suggestions. It would sure be nice to know how old she is, but oh well.
My female GSD has always been on the small side, with her weight staying in the 50-53 lb range, which was perfect for what we did (agility). She's well within the standard, height wise, but just lean. Perhaps Kai just comes from lines that won't end up on the huge side. She must seem almost like a mascot compared to the rest of your crew<g>.

What is the diet?
Did she go from kibble to raw, or bad kibble to better, or what?
Do you give probiotics in the form of plain live-culture yogurt?

She has the heart and attitude of the bigger dogs but not the size - which makes no never mind to me. I just want her to be as healthy as she should or can be.

Any chance of a kibble switch?
Here's the Purina One lamb recipe's first few ingredients: Lamb, brewers rice, corn gluten meal, whole grain corn, poultry by-product meal (natural source of glucosamine), oatmeal, animal fat ...
That's a lot of grain and grain fractions. And corn is one of my least favorite (along with all the gluten grains) to see in a dog food.

P.S. Better (lower in grain, especially) food can sometimes end poop-eating. I have run into it even in adult dogs and have used a combo of better food and correcting/redirecting (to break the habit) to end it.
ETA: You will want to check that the yogurt is not heat-treated after culturing. It will say "live" or "active" cultures on the container.

A new kibble is absolutely possible. If you were to urge a favorite and a second favorite kibble, what might they be?
I think I'll change all the dogs. Can't hurt.
I will look at the yogurt container... It says 'live and active cultures.'

Mike, I'll chime in here, since I'm a kibble user in conjunction w/ raw.
I rotate between grain-free kibbles, and I like the results from all of them:
EVO
Wellness Core or Wellness Core Ocean
Orijen
I think you will find that you will feed less food,and see smaller, firmer stools. (my 90 lb moderately active female eats a total of 2 3/4 cups per day, or half that if one of her meals is raw) If I were to feed exclusively kibble, a 16 lb bag would last me for 1 month...
I also add plain yogurt and salmon oil/vit 'e' on a daily basis.
