Ok -- I have a question. Every once in a while, I'll give Izzy a little pat on the head. I've noticed she lifts her paw when I do it, which I remember on the Pack Structure DVD Ed saying is a sign of submissive behavior. But, while she's doing it she will kind of mouth at my hand. Not bite it or anything mean, just like, I don't know, like she puts my hand in her mouth. This doesn't seem like something a submissive dog does, however, she keeps raising her paw just like Cindy's dog on the video did when she's doing the mouth thing. What's up with this?

My submissive Husky mix always does this to my other dogs. He's constantly attached to one of the other dog's faces. He puts his mouth around their muzzles, throat, ears, etc and mouths on them and wiggles around (with his paw up). It gets worse when he's happy or excited. Alyssa is right, it is a greeting too. He doesn't do it to people though - he pokes us with his feet!
So in answer to your question - I agree with Alyssa. It is a submissive behaviour.
My husky does this too, he is always mouthing nicos face and ears, and he nibbles my chin and ears too. His ears are back and he lifts a paw when he does it.
He only does this to me though, no other humans and it is incredibly gentle so I allow it.
