Ok. I've done some searches but am still not sure of a couple of things.
We got our new pup 3 days ago. He is now 11weeks. He has been on RAW. And my friend who I got him from gave me what he was feeding him. Ground beef mix and ground chick mix. I added some salmon oil yesterday. His poop has been runny last night, and still runny today, maybe even runnier. His first several stools when he got here were not runny so I'm a little concerned. His energy seems down, but I may be giving him too much exercise also. I'm going to run out to the store and get some rice and pumpkin.
How much rice and or pumpkin should I give him?
Should I be feeding him 3 times a day? How much?
How far should we walk?

Yes, you need to be feeding an 11 week old pup 3 x per day.
How much have you been feeding since you got him? (weight is better to know than volume, if you are feeding raw)

Ditto, exactly how much per day (ditto, by weight), and how much does the puppy weigh?
Is that a pre-made dog food mix or a butcher mix or what? What's in it besides chicken and ground beef?
The emphasis on amount is based on the fact that the puppy came without diarrhea and now has it (on the same food): this points pretty strongly to overfeeding-per-meal. (This is very common when people post about diarrhea.) Not necessarily overfeeding, period, but per-feeding.
Also, how runny? Pudding or water?

Different breeders do it differently but it's generally recommended/accepted to worm them every 2 weeks. Some more natural breeders do fecals instead (which could get quite costly with large litters), or every 4 weeks.
So a typical protocol would look like 2, 4, 6, and 8 weeks.
A minimal protocol would be worming or fecals done at 2 and 6 weeks.
My own litter was done at 2, 4 and 8 weeks.

Not sure about the mixes. I'll find out. Same as the worming. Last two stools were harder. He didn't eat lunch. I tried mixing in some rice with the meat and he took two bites and went and laid down.
stool was pudding and looser.
As far as overfeeding. I didn't feed him the first night because we were feeding him treats like crazy. Organic, nitrate free turkey dogs, and zukes mini's. And have given him 2 meals a day for the last two.
I got a scale for the food yesterday and will start weighing out portions after I weigh the pup.
Also, I add a little water in with the food. After Alyssa's scare with Dante I'm hyper paranoid about dehydration. Is this ok?
The only changes that I can see are the salmon oil, and treats, and I gave him a pig ear yesterday. And the trauma of coming into our house. Which with three kids is hard for me sometimes!

Pig ear. Bad move. (No attack and no insult; a lot of people don't know about those smoked flavored products, or about supervising and watching for chunks going down.)
"Didn't eat lunch; took two bites; went and lay down."
This would have me calling the vet. I don't mean that the pig ear necessarily triggered these symptoms; I just mean that lethargy and loss of appetite in a puppy are vet-worthy symptoms.

I forgot to add: When the puppy has a clean bill of health, we can walk you through exactly how to avoid diarrhea, what and how much to feed, etc.
Right now I would be making baited water and encouraging the dog to drink lots of it while waiting for the vet to call back.
Can you find out exactly what's in the mix you are feeding? It's very important that a puppy get the right amount of calcium (digestible bones) so he can grow teeth and bones.
