So I talked to an owner of a small mom and pop deer processing place and she said she might be able to hook me up with all the parts they don't use. This is scraps/bone..etc..anything that isn't used like connective tissue, bruised meat..stuff like that.
The lady doesn't know regulations and is unsure and will check on it...but wants me to name a price per pound I would pay if she's able to sell it. She said it would take more labor and supplies to prepare it for me.

You probably don't want leg bones--at least not for food. Probably too hard for most dogs to eat, or even try. Tooth breaking risk.
I also would not feed spinal tissue, vertebra or brain--because in some parts of the country deer populations are subject to Chronic Wasting Disease--a kind of "mad cow" for deer. If you know you're safe in your area, then maybe this wouldn't be an issue.
But scrap meat (including organs--heart, liver, kidney, trachea, tongue, tripe) would be awesome. I get it free from my brother who hunts. But I think I'd pay a dollar a pound for scrap deer meat otherwise.

I pay 1.20 - 1.45 a lb for mixed cuts of beef, chicken, and pork which come in 10 lb frozen bricks with no bone ( except for the chicken). I usually pick up 50lbs at a time from a very nice butcher who sets them aside for me in the freezer and calls when my box is full. I also tip as a thank you for them doing me such a great favor.
