I have had Lucy about a year. She was filled with Giardia, infected skin, infected gums, and poor digestive system and has food allergies. She would try to bite anyone who touched her. And, she is the most structurally unsound dog I have ever seen!
I love her. She no longer tries to bite me, she no longer carries food around in her mouth (I know she did, because she sneezed once and food flew out of her mouth!). She doesn't have to be in the same room with me, she walks loose leash, she sleeps through the night without nightmares (and dogs get nightmares! She would scream and cry and it broke my heart).
She can't walk very far without her right leg giving out or her knees. About a mile in the woods, then she face plants and plows the dirt. On chip and seal, she is good for about an 1/8th of mile before she face plancts and chips the seal. (We don't walk the road very much). If she plows too many furrows, I ask her if I can carry her. She will come to me, let me pick her up, and we walk that way for awhile until she looks at me...and that is my cue to put her down, set her firmly in place and let her walk on her own.

I was just watching an episode of the Dog Whisperer last night (which I haven't seen in years, actually) and he told an anxious couple who was dealing with a nervous/aggressive Great Dane that "we never get the dog we want, we get the dog we need". It was a generalization, obviously, but I thought it was a wonderful statement - it rang very true for me with my Oscar, and I think the same could be said for you and Lucy. The ones that teach us the most can come in the most unlikely packages...
