I would buy Der Schutzhund as a starting book. Anybody starting bite work would really do well to read it, especially if it's for schutzhund. It's a short read only 88 pages but i honestly read the whole thing the day i bought it, and i read a section a day at random most times. It's really well written and you will understand why the helper does what he does and what your role as the handler will be. It's old, but most of the information still applies today.
I would also get anything released by Micheal Ellis. They have 2 DVD's currently available one on training with food and another tug DVD and one about to be released that I'm really excited about which is the competition heeling DVD. These DVD's are not specifically about schutzhund, but it's the foundation for all the obedience work that you will be doing.
I'm not all that experienced in the matter, and other people might be able to give you more insight.
