This is an oldie but goodie and when I say oldie; I am talking 1898.
"Wild Animals I Have Known" by Ernest Thompson Seton.
It is a collection of stories, the first being "Lobo, King of Currumpaw". I read that story as a child and have always carried it with me. It is haunting. Not a dog but a wolf story and I can't think of any dog lover who would not enjoy it. The link below gives you a preview of the first story "Lobo." Be warned it is a tear jerker.

I was lucky enough to meet the author a few times when I was a kid. He did a presentation to my class when the original movie first came out. He was an interesting person to listen to, and if it weren't for his wife, the story of Old Dan and Little Ann never would have been told.
When I was a kid, I was enchanted with books by Albert Payson Terhune, who wrote collie stories. (the Sunnybank collies) They were great books for a kid. Terhune was a breeder and author...

That is an awesome one and it does include some dog stories too (Wully and Bingo at least). I'm hoping to inherit my dad's copy some day.
Jim Kjelgaard wrote some good dog stories. I've read Big Red, Irish Red, Outlaw Red, Nose for Trouble, Desert Dog, and Two Dogs and a Horse.
Plague Dogs by Richard Adams is a bit of a different flavor (terribly sad and disturbing) if you have a strong stomach. Watership Down was much better (simply awesome really), but it's not about dogs.
Since no one has mentioned them yet I'll also toss out Old Yeller, Lassie, and 101 Dalmatians as worthy reads.
