I have been reading leerburgs articles and in the article bite training puppies 8 weeks and older he states that this training is for protection dogs or police dogs as a full bite is not required.
First question. Can you use this training (article) for French ring or mondio ring?
Second if you have a pup and wish to start but are unsure of the training it will receive in future due to location, for example don't know if there is sch. or French ring or some of the protection sports, can you start with this or would it be better to due the full calm grip.
I may be confused as to what you are asking. In French ring you don't see big grips due to the speed of the decoys. Schutzhund the target doesn't move. In ring, we want the dogs to counter if they get a chance. In the Belgium ring they want the big grips, I don't think they care if it is calm or not. What a dumb concept anyway, deep, calm grips. I think that is an oxymoron. A counter is when the dog will take a deeper bite if given the chance by the decoy.
You can practice this on a tug with a young dog by simply giving the dog some slack by decreasing the resistance on the article - a dog will learn to "counter" with a deeper bite. Needless to say, you verbally reward him when this occurs!

Definitely get Ed's videos, they work for Schutzhund, French Ring or any sort of bite development. While French Ring trainers care less about the deep calm bites just because the dog has to get his teeth on them while the decoy esquives - the goal is to teach the dog the right entry patterns - to place its head correctly to keep the decoy from getting away. But to do that you have to develop the dogs prey drive and its desire to get the bite. Ed's videos teach you the right way to do that.
