I can give no legal advice, though I greatly sympathize and agree in full with Jenni and John - the owner of that lab should be taken to court for every charge possible, what a horrible individual. This is indeed a "worst nightmare" scenario and enough to make one sick. Luckily, it sounds like there are ample witnesses, and while the damages may vary in the eyes of the court, this man was clearly in the wrong and out of control - PERIOD.
I'll use the same disclaimer as David but I will say this...Sue the piss out of his homeowners insurance! The company will want a quick settlement but don't give in.
Even though she can't get much for the dog itself in a lawsuit, she can get big bucks for mental and physical pain and anguish as well as for permanent disfigurement.
We have an officer who sued the homeowners insurance of a person when their dog bit him after she was told to put it away. More and more officers are considering this when it happens. The same holds true for civilians.

Something similar happened to a friend of mine who lives in Boston just a month or so ago. No dogs were killed, but my friend was bitten by the dog (Chow mix) who ran out from his owner's yard (she was on a public street with her leashed dog).
The horrible thing about this is that EVEN THOUGH the owner of the attacking dog was horrified and upset and freely admitted to the cops AND to her insurance company that she should be held accountable financially, her insurance company WILL NOT PAY until ONE YEAR later. Because, their settlement is based on lasting SCAR TISSUE!
