It will be fine. Doing the research ahead of time is excellent.
And yes, drinking will mean potty, and that's excellent for the puppy. Keep that urine diluted and clean, and that's the way it's done.... drinking and potty.

I pick up Enoch's water between 5pm-6pm. I was wondering if I could extend it to 7. It's so hot out here in the desert and I want to wait until it cools off to do another playtime outside. This usually means after 6 but I want to be able to give him water so I don't do it. He sleeps through the night now and wakes up at 6 to use the bathroom. What should I expect if I extend the time I pick the water up?

We usually take him out between 10-11 and he usually signals to us. I think he's getting the hang of it. I'm going to try it and see. I was wondering that with older dogs is it the same method or can you leave the water with them all night?

I leave water out all night with my all-adult pack, but I have never heard anyone go get a drink in the middle of the night.
If your dog signals, then I think you're safe with the experiment.
You're safe anyway, of course, but I just avoid as much as I can any situation where the dog is forced to potty indoors .... it's just not an enhancement to his good new outdoor-potty habits.

Very small-bladder dogs (small dogs) have a shorter span, of course, but all sizes that I've had can have free water once they are solidly housetrained.
