One thing I probably would not do it to replace any of the sources of long-chain Omega 3s with virgin coconut oil.
While it seems to have a lot of benefits, it looks like its claim to Omega 3 fame is based on short- and medium-chain FAs.
In humans, these are converted (somewhat inefficiently) to the long-chain EPA and DHA that are so hard to incorporate into the modern diet.
In dogs, there is almost zero conversion ability.
So for the other purported benefits (and they may all be glowingly true, especially the properties that fight certain kinds of infection), I'd read up and decide. For Omega 3 benefits, I'd keep in mind that point about the ability to convert in humans that dogs don't have.
