I finished school last year and cooked for a sorority at FSU for the school year as my first job to gain experience and speed.
Cooking for the sorority was a totally cool job, I had complete control of the menu, a huge budget, I got to cook a wide variety of foods every day, and I really stepped up the expectations of the entire campus for just how good food could be ( provided someone gave a damn, which I did ).
The sorority used to have 25 to 30 girls a night eat in the dining room, while I was cooking the number stayed over a hundred most nights .
Those girls will never eat that well again...ever!
I didn't even know what that meant until I saw it on Martha Stewart . I can set the house on fire boiling water, but my sis is putting on a fabulous spread. She IS brining the turkey too, apparently .
We usually have a really juicy turkey, homemade stuffing, fresh cranberry jelly, a baked fall vegetable medley (varies slightly from year to year, but always colorful and delicious) Sweet potatoes cooked in some magic way that I don't understand but appreciate. There are usually a few added bonuses to the 'basic' dinner, but I never know what they are going to be until I get there. Desert is usually Pumpkin pie, Apple pie, and chocolate dumplings.
My sis isn't a chef but she loves to cook and is very good at it. Even better, this year it's just her and I and my daughter (and dogs) so we can wear SWEAT PANTS
I love brining poultry. I have used another recipe but think I might try this one out. Thanks Will! I do not do anything for Thanksgiving but in the middle of December I have an annual sit down Christmas dinner/party for about 20 of my dog friends. I usually do a rum raisin glazed ham but am trying to get up the nerve to do a turkey this year. I am just afraid that I will screw it up and will be forced to order pizza for everyone :-p
