I had the very same problem with my two pups (American Bulldogs). They were on Merrick, and I switched them to Innova LB Puppy, and about 2 weeks later, I noticed both of their coats becoming dull and shedding quite a bit. After about a month, I started adding salmon oil to their kibble, with some improvement. This occured most of the time while on it. Now I have them on Orijen, coats are shiny again, and shedding a lot less. I have nothing against Innova, I think it is a good food, but that was my experience with two of my pups.

I tried to switch Logan to raw food, after only a week and a half, she started to shed her beautiful wintercoat. I carried on feeding raw for over a month and she kept shedding more and more. Her coat lost the lustre and I was really getting worried.
I decided to STOP feeding raw and put her back on the dry food(kibble)she had been on, as thought it might have been caused by change to raw.
Reading threads on the subject, am starting to think its maybe a global kanine shedding movement!
Trouble is the temps here in Finland can often dip to around - 20 C and summer coat(on a GSD) is just NOT warm enough for her to be out for longer periods.
What to do for the best, I really dont know anymore,,

You were feeding a balanced raw diet with fish oil, organ meat, and with the animal fat left in (after the low-fat intro)?

I have seen kibble fed dogs do this when switched to raw. Sometimes they seem to get worse before they get better. I had a very overweight Pit Bull foster w/a nice coat come in, I swithched him to raw, his coat got dry, he lost it all, and then it came back better than before. My advice is that if you're feeding a balanced raw (w/plenty of fat for that cold weather) like Connie inquired, that you stick with it. Remember, many dogs go through a "detox" period when switched to raw as their various body systems get stronger and they are better able to deal with health issues that may have been dormant until that point.

I've used Innova LB Puppy with LOTS of puppies, supplemented with cold water fish oil and E and have never had any coat issues. They are always smooth and shiny with bright eyes and lots of "wiggle". I think even the best kibble needs some fresh supplementation of Omega 3 & 6 plus E. I've always made fresh bones available too, and will chuck raw poultry parts to pups occasionally when I have them.
I'm kinda leaning toward Evo over the standard Innova formulas these days, and my dog gets LOTS of compliments on his coat. I haven't tried Evo with puppies yet, but I like that it's grain free.

When I switched mine to raw she started to shed so bad. I gave it a few weeks to see if it was just the new diet or something else. After about 3-4 weeks her coat was back to normal (shiny and full) and the shedding was considerably less. It could be the food...it could be the weather...give it time.

I have a foster that I switched to Wellness (have no idea what he had been eating before, but since shelters get donated food and his owner neglected him, I am sure it was nothing good). His coat got so bad I thought he had food allergies. After six months his coat grew in soft and shiny. I think Jenni is right about the detox. It happens to me too whenever I eat green things!

I admit that I thought this detox-when-switched-to-fresh-food was kind of a myth. Now I think that I haven't really noticed it because I am always switching an adopted dog with health challenges ... so I haven't known the dogs pre-switch, and also because they are in crappy shape to start anyway.
The change that happens with fresh food is profound, of course. But now I will make a note to watch for a detox period next time. This thread has convinced me.

My pup went through a mild detox effect when we first went on raw. Mostly a dramatic poop volume increase, followed by a sharp decrease once her colon had been "cleansed" LOL.
