The dog was a kennel dog, he doesn't know house manners, he needs to learn. Its separate from obedience training. Obedience is sit/down/stay/heel/walk on leash/come when called etc. Not "when I'm not looking don't touch anything." The dog just wasn't taught.
Exercise the hell out of him, and don't turn your back on him (crate when you can't supervise). It will take a while for the dog to learn, its not an overnight process to go from kennel dog to house dog.

Thank you, Mike, very good point. I will definitely start crating him more, then; I was thinking I would instead hear "How will he learn if you keep sticking him in the crate every time you leave the room"?, but what you said makes sense. I'm new at this, so I appreciate the advice. I received an e-mail from his previous trainer just now advising me to stick his butt on the treadmill for 2 miles or so, and I will try that as well. Thanks again.

DEFINATELY DEFINATELY need more xercise!!!!!!!!!!!
Probably under stimulated at his old trainer's as well but what damage can you see in the kennel.
I also am a first time working shepherd owner. I have always had dogs, some very active boxers so I thought I would be well prepared. WRONG!!!
My dog is great because his off switch is there but if I lapse for a few days on his work then I can see the pacing start and we would have lost a valuable chair if I hadn't walked in mid chew.
Also the huge red flag from the previous owner is that the dog would need no futher or continuing training. This is just BS from a common sence point of view.
Instead of walking at night could you jog? Pick up a training class. It is fun and a great bonding time and will mentally stimulate your dog.
Your boy needs a job.

Thank you for the link: I do have several "chuck-it" balls here and he would chase and retrieve those all day if I let him. I have done short 5- to 10-minute obedience sessions with him each day, though I have to tell you he doesn't seem to enjoy them much. More like he's doing it because I'm telling him to, not because it's fun for him. He positively came alive when doing bite work during our handler-training sessions when I picked him up, but even then seemed to only tolerate the obedience.

Thank you for your post, Michelle. I'm seeing immediately here that he just needs more, more, more exercise, when I thought I was doing enough - wrong. No problem there, but I wish I would have started off that way. I should have stated the "walk" part differently - we do jog in the evenings and he seems to love it. I don't mean to seem "dense", but what sort of training class would you recommend I enroll us in?

You may also want to look at 'how' you are doing obedience. Dogs like this live to play with and possess their toys. Try to harness that drive to your purposes. 'Do it or else' just seems to make them more stubborn.
Obedience training should be more like a short, energetic play session. If you are both panting at end, you've probably done it right.

If he comes to your area, try to attend one of his seminars. Even if you don't train competitely, it's worth the time.
For the exercise part, I use the Chuck-it. About ten sixty yard dashes after the ball seems to do the trick. Clocked her at 28mph going out after the ball.
However, it is easy to over-do it on even a moderately warm day and induce heat stroke. So, take care & pay attention to your dog.

Thank you for the link and the tips, Charlie! We do have to really watch the heat here in Phoenix; we will be moving to San Diego in a month where it's a bit milder, but will still have to exercise caution. He'd chase that ball all the day long if he could. Thanks to everyone, in fact; this is a learning experience and I want to ensure that I do things right. I really appreciate all of the advice and tips and will implement them.
