The problem with dogs that do not have enough prey drive is that you will struggle to even train in Schutzhund.
I have seen people turn up with showline GSDs that cannot even bite a sleeve properly after a lot of training and exciting by the helper. They just don't have enough drive.
Tracking can also pose problems to showbred dogs. There are exceptions of course.
Although you may not want to compete, trying to train a dog without enough drive can be really hard, really frustrating.
It sounds like you really like this breeder but just bear in mind the comments that people are making.
A working line breeder should be able to pick a laid back puppy that has the ability to work but should be suitable for your family.
