What about putting the mushroom in something so he can't touch it? Maybe a quart jar with cheese cloth over the top? Then put out 3 or 4 empty jars as well and and have him find the right one. Be sure to make all the jars the same except for the mushroom.
I'd be using a clicker so I could mark the exact behavior I wanted (either a sit or down) when he found the mushroom.
I like the idea of a down alert as opposed to the bark.
So he'll be working close to you within view?

Not sure about Betty, but I can tell you the reason I wouldn't use a bark. I would want a dog to give me a calmer alert as to not disturb the mushrooms - morels usually grow in bunches and where there's one, there's probably 2 or 3. So I'd rather the dog would freeze and wait for reward rather than getting excited and barking. Around here at least, I would think you'd want a dog working close in because you've really got to hunt for those mushrooms when they're camouflaged by the vegetation in the woods.
That's a great idea with the jar and the cheesecloth. Like the dog "shell" game.
Today he really got WAY too wound up about it, a - he figured out what I was asking, and he could smell that mushroom anywhere, and get the "cheese" and he just got sort of crazy on me. We had to stop. He's still super excited. I think he wants to do mushroom training again NOW.
When we are in the woods he should be pretty close. The cover is short that time of year and he is bright white,so I will be able to see him. I get exhausted looking for the mushrooms, I'd like him to use his nose to help me.
