You dedicate a thermometer to the dog(s), lube it, take his temp at the back end.
I talk calmly, lift the back end (or someone else can) so no back-feet purchase, and wait two minutes if it's a regular thermometer (or for the beep if it's digital).
If you are not confident about procedures with the dog, get the plastic digital. However, I've never had a problem if I have everything (including awesome rewards) ready and remain very calm.

Sounds good. I will pick up a thermometer today. I called the vet and she suggested waiting 24 hours to see if it clears on its own.

Jethro came from a shelter, right, so presumably he had vaccines?

Yes, and I seem to recall he had to get some shots when we had him neutered at 6 months. The neuter was part of the adoption contract, I didn't know at the time it might not be good for his health.
He had another good looking poop out on our walk this morning and he only seems to cough when he barks - ie. he isn't coughing out of no where, he barked and then he coughed from barking. Out on our walk he spied a cat and lunged for it barking, and that made him cough.

His temperature is 100.4 F. He definitely has a cough. It sounds like he has something stuck in his throat, but he has eaten his dinner and has been running around as if everything is normal. It's just every once in a while he coughs like he is trying to dislodge a treat that has gone down the wrong way.
We met someone at the park this evening who said her dog had had a cough for a couple of weeks and had cleared up on its own.
I've never had a dog with a cough before, so I really don't know what I am hearing.

Jethro's cough has gotten worse. It sounds, and looks, like he is trying to clear something stuck in his throat. But he has been eating and drinking normally. He's not in distress, he had a great time running around this evening.
I just called the emergency vet centre and the person on the phone thinks Jethro has Kennel Cough. She recommended waiting until morning and taking him to our vet and saving the extra high 24 hour emergency fee.
I called our vet earlier today and she recommended waiting overnight to see if the cough clears. So I guess we are in for the night.
I've gone through his adoption records and they don't specify that he had shots, but I think they were probably part of the adoption fee.
Ugh. He is resting comfortably. But the cough sounds horribobble.

Described as a "goose honk" cough. The vaccine is not very effective. The other dog will likely get it too, unless he is old enough to have developed strong titer from recent exposure.
Your veterinarian may dispense medication for this condition based on your description of symptoms because they don't really want a big dog coughing up the waiting room. Medication will not be an immediate fix, he is likely to cough for quite a while regardless of treatment.
For most dogs, it sounds worse than it is!

Was there any connection between the gastro-intestinal and the cough? Or pure coincidence? Jethro slept well last night, I only heard him cough once. If we can avoid medication, I would rather do that because I don't believe in medicating every single bug. If this is viral, we will just wait it out.
Any dietary supplements that can help knock it out?
Gosh. Thanks for your advice!
