I didn't check every post and am kinda rushed, but one thing is that once-a-day pooping isn't at all uncommon in dogs who aren't eating kibble. When did he last go?
Twice since Saturday: does that mean one time Sunday and one time Monday?
If he has now gone without pooping for a full day plus, I'd probably give him a snack of all chicken (no rice). The binding qualities of that diet are from the rice.
(Boneless chicken, of course, does not have the calcium from RMBs that would supply another kind of binding.)

If you are desperate to do poop training and the dog will permit this you can insert a glycerin suppository or a vaseline lubricated kitchen match into his rectum. He will then poop after a few steps, but this may not be the bonding experience which you are trying to achieve.

Anyway, he got a chicken breakfast (he seemed to like the fact he no longer has to pick around the rice to get at the chicken XD). He's eating well, passing some lovely doggy gas :P and still peeing on his front feet. I got so excited when I saw him try to lift a leg on something until he fell over, kept peeing, and not only got pee on his front legs but ALL OVER his stomach and Ryuk's head. Tossed Ryuk in the shower and let him play for a bit while I went after Rico with baby wipes....
