so today we got chickens and turkeys. Does he get the skin? I've heard this is 'unhealthy fat'

Dogs use fats like we use carbs.
LOVE it!! So good to know, as I've heard from my ex-vet fat is bad for dogs, and older dogs should eat low fat food. IMO, if a dog needs low fat food he should just get less of what he's already eating.

there is a dog that lives about 1/2 mile down the road from me that could be your dog's sister. They look almost identical.
That's awesome! I've only seen one other dog that looks like mine. It was at work, and we were in the woods (I work for the Forest Service). I swore it WAS my dog. I was ready to march over to these people to yell at them and to take my dog back. When I got closer I realized it wasn't mine, but got excited to meet a dog that looked so much like him!

I only remove skin for the first week on the diet, when the dog is adjusting to the increased fat intake.
Most animal fats are saturated fat. If they're free range/grass fed they'll have more unsaturated fat, but still quite a bit. This is natural for carnivores, in balance with the rest of the carcass it's beneficial.
The problem vets run into is when people trim the fat off their dinners and give it to the dog on top of a balanced meal. That can go overboard with the fat and cause real problems.
