lt is herding, no different to holding one shepherds mob away from another, an integral part of the old GSD style of herding, you cut one out and basically point out to your dog , this is our herd lets keep it near me.
l prefer to just look at things as a job for my dog and try not to confuse myself with what "drive" box to put it in,

You will find dogs within breeds capable or having different stengths to do varying jobs within a 'herding' dog, however not all 'herding' breeds were bred for the 'all purpose' herding dog. What you describe earlier Tony is also a pack learning to work together for thier food source and also pack rank.
Taking single or the 'few' stock away from a herd is also part of some herding breeds jobs etc. You see it at Stock dog trials as a task for the upper levels, there it is called a 'shed'. Young dogs who are working more for themselves also will take stock (one or more) and hold them to a fence etc. This is common behavior you see in young or beginner dogs.
