While I do like the "Pork fat rules!" motto from Emeril, I have enough of my own that I do cut the fat from the stock.
My Croatian grandmother used to say the fat is the best part...I certainly agree! But.....
The best fat is from a whole pig roasted on a spit. Crispy, crunchy!
We have pretty much the traditional meal, this year it will be for about 16 In my grandparents small condo in hot springs
I will cook
the stuffing
the turkey
the gravy
the mash potatoes
the green bean casserole
all from scratch
Oh and Melissa....I got some cream sherry to try this year...that stuff is not easy to find!!
There are rolls too but I don't know who is in charge of those.
I enjoy doing the cooking, as long as everyone isn't at my house and the men usually do the dishes and clean up...which is awesome
My mom does the sweet potatoes, the pie and these amazing pumpkin bars.
Oh and I forgot the Trifle and the english cranberry pudding..my grandmother is from is england so we get those yummies a few times a year.
But to be honest I am more excited for Fridays food, we are having a shrimp/crawfish/crab boil. With fresh seafood being driven in from the gulf coast by my great aunt and her husband.
I grew up with eating Italian food for the holidays and the occasional turkey dinner as well. Both were fabulous. Now that I am cooking, I love to brine my turkey and have done it with bourbon (YUM). I've used the Martha Stewart recipe and I can't remember where the bourbon idea came from. My husband was willing to sacrifice some of his Maker's Mark for the cause.
I am not doing the cooking this year, but the menu will be very typical and I think at last count the request for pies was up to 8 different kinds.
I always make stock using the neck and other goodies (giblets?) from the turkey and started making gravy the Tyler Florence method. He buys turkey wings and cooks them ahead of time with onions and other vegetables then uses the juices, etc to have a gravy made ahead of time. Check out food network for that recipe. I rely a lot on that website for ideas!
