As long as he has gone out one last time before bed, just ignore his cries.
As long as you have withheld water 2 hours before bed, you should be ok. Have you been getting up in the middle of the night with him or has he been sleeping/holding it until morning?
he holds it very well. Only time he's pee'd and I haven't caught him is in the expen. We've made mistakes. Heather was asleep beside his kennel and she felt a drop of spray on her elbow. LOL he had to pee and let go on his kennel mat. The mats don't really hold water well they let the pee bounce off so my wife almost got a shower.. yuck
Ok, well it is good that he sleeps through the night now.
Just one tip that has been really helpful to me. I like to say the same thing each and every time you take Gambit out, just give him the word you want to use. I use "get busy" and the dogs know to go to the bathroom. If you do this repeatedly, he will learn that your word means go. It comes in handy when you need to get him out quickly to do his business.

Make sure he only has enough room to comfortably stand and lay down in his crate at night. You don't want him to have extra room and feel comfortable pottying there. With my pup, I quickly learned the difference between "hey, I don't like being in here" and "hey, I really gotta go potty". If he had to go out in the night, I calmly let him out, he did his business and was returned to the crate.

If the last one was a log and he is pooping much less frequently than he was, you can give a snack of all white skinless chicken (about 1/3 cup) or swap out some of the rice gruel and swap in some kibble, not increasing it again (which would cause diarrhea again) until you see the result of that meal.
HE POOPED it's a log and a odd yellow color then went to brown after it sat in the sun.
