This took a while to research. Even now, I'm not 100% certain of some of the mechanisms.
Anyway: White rice (and/or rice water) is preferable to brown rice because the binding quality isn't the rice bran. (Bran and other insoluble fiber are sometimes recommended for chronic diarrhea, such as with IBS/IBD, but we're talking about acute diarrhea here.) The overcooked mushy white rice is easier and faster to digest (for most individuals), so that it's digested nearer the front of the animal's tract than the back; that would mean that the inflamed bowel might have less irritation from it that it would have from the bran.
But previous posters who have dogs who do not do well with even occasional grain-type foods are certainly correct about giving NO rice to such a dog.
Still looking to find the exact mechanism by which rice helps to bind the system that's in a diarrhea cycle.
