I recently started my 20 lb terrier Marley on a raw diet. I'm still getting the hang of it and I'm sure his digestion pattern is too. From what i've read I can expect his stool to be smaller and more firm. What about frequency? On Wellness kibble he was going 2-3x a day. very consistent. In the past week and a half he used to go 2x a day (smaller in size) then it was 1x and I also noticed he sometimes strains a lot more. On two occasions he was squatting for a few minutes.

One to two times a day is not at all unusual, but straining (and/or hardness) might well indicate too much bone-to-meat. I would try adjusting the meat upwards in your meat-to-bone ratio. I would do it right away so the straining doesn't turn into constipation.
the meat-bone ratio i've discovered is more "feel" than anything. the whole 50% (or whatever the percentage is) RMB is misleading because not all RMBs are the same. I've been told i should aim for something like 10% actual bone.

By far the most simple (an in my opinion, the most accurate) way to set that ratio is to feed the RMBs the way they come.
That is, a quarter of a chicken (for example) needs no ratio adjustment. Even backs, which come close to replicating the whole bird's meat/bone ratio if you add a little muscle meat, are very simple.
well i started off with over frozen meat in the freezer which was mini chicken wings. then i bought regular sized drumsticks I got on sale at .67/lb. I bought gizzards thinking that would qualify as organ; later i found out it's not.

That would be enough bone to cease bowel movements in my dog if fed more than a couple days in a row.
Variety isn't just in types of meats, but also in "parts". You are right. All RMB's are not created equal. That is why you don't feed the same one, day in, and day out.
Or do as Connie said and add a little meat in there. Just add a small amount and work up until he isn't having to really strain for a long time to poop.
IMO, bony chicken meals are also a good time to introduce variety in the form of organs or other protein sources. Just always remember that everything new is added in small amounts so you don't "shock" the dog's stomach with something that it isn't use to.
Your "feel" for meat:bone will get better over time.
