I wonder if he is reacting to a dream he had? We know dogs dream, and I've often wondered how they feel about their dreams. We humans understand what dreams are -- well, okay, sometimes they are pretty incomprehensible, but we do know they're not real events. Do dogs understand this or do they think the events they dreamed about really happened?
My GSD pup has been making a strange sound when he sleeps and stretches since the day we brought him home. When he was really young, about 12 weeks it sounded like a baby cow. Now that he's 93lbs and has a 34"dia chest he sounds like a full grown cow mooing. It's just too funny!
