I see harnesses and collars for sale called "agitation harness" and "agitation collar." I'm just wondering about them out of curiosity. I get the impression that they are used in some way in protection sports but my Google searches haven't turned up anything that makes it clear to me.

Agitation equipment IS used for protection training. Agitation collars and harnesses are designed specifically for the purpose, and there are several key differences between them and other harnesses and collars.
The first and most noticeable difference is the "handle" that is riveted to the collar and to the harness. On the harness, it is located above the back, near the neck. This handle allows the handler to have a firm, stable grip when the dog is lunging. It is much more effective than handling a lead in that, it keeps the dog closer, you are not trying to hold a leash that might slip through your hands, and it also eliminates the swivel where the snap attaches.
Agitation equipment should be built more ruggedly than other types of equipment. You have to control a full-sized working dog who is trying to pull away from you in order to bite an agitator, and you can't afford to have cheaply made equipment as your last means of control. Stitched AND riveted is what I look for.
The breast plate on an agitation harness is critical. It must be sturdy enough and positioned correctly to absorb the impact of the lunging beast, yet not ride up on the throat in a way that might choke or otherwise impede the dog's barking or biting.
