I've had several males not lift their legs until 18 months, I wouldn't worry about that.
When do they calm down and develop more adult traits? My experience has been that a male pup will not have a fully mature adult personality until he's over two years old. Of course I tend to buy dogs from lines that mature slowly, so your experience may vary. A talk with the breeder of the dog about past puppies might be helpful in deciding on a timeline for training objectives. Or when your furniture will be safe...hehe

My boy is 15 months and he is still acts very much like a puppy. In the way he plays and acts like a puppy. He still squats but is starting to kick up a little grass after. To compare, my sister has a boston terrier that is the same age. He already lifts his leg and acts like an adult. Big dogs mature slower. I think it is fun to have a 100 lb pup that still acts crazy. But he gets serious when it is time to work, but it is still a game.
