It's certainly worth checking out but I think that a hound that would be willing and able to take on a man would be fairly rare. Else we'd see them a lot more in police patrol work.
But for me this comes under the heading of "reinventing the wheel." It's hard enough to find a good patrol dog in the breeds that have been specifically selected for this trait; much less to go looking for another breed.
In any case my post was just an aside that just because a dog will engage a hog is not an indication that he'll engage a man.
