I bought a 6-way cut goat for the first time last month and my dogs love it. We cut it up with a cleaver and I'm wondering if there is someone out there who has a better idea. (I have the same issue with Buffalo Oxtails.) It's not impossible but I'd be willing to invest in a proper saw/tool if someone has a good recommendation.
I have the same problem with Deer parts. It's a pain to cut and the only thing that will cut rib cage spine attachment points are a fine saw. I tried a set of heavy duty kitchen shears and it was no go, and my uber sharp cleaver I'm afraid to use it for dog food. I see at the butcher they use a big band saw but it would not be really practical to use my wood band saw to make cuts like that. Looks like it would be easy though.
I am very fortunate to be located where there is an unicorporated non-profit association that makes a very nice variety of food available for those who are feeding raw. It is run and worked by volunteers and the prices are low. The orders are placed monthly and come in 40-60 lb cases so I have to break them up.
Go to your local Kitchen supply store and pick up a bone saw.
Partially freeze the carcass like someone said before and that's it.
Or just ask your neighborhood serial killer, they have a lot of experience chopping up the bodies and maybe they'd be willing to share their experience.....

Medical examiners are good to ask too Will, not just the serial killers, although they may report you and you will be watched as a possible serial killer....
For $59 at Cabela's or Scheels (also at the online stores) you can get a "game" processing kit. It has all the stuff you need to cut up meat (bone in). I love mine.
Beats those wimpy kitchen scissors.......
