Sometimes Kodee ends up eating his dinner fairly late in the evening if I'm really swamped. However, most nights I walk him and/or play catch w/him before he gets crated for the night.
On evenings when he eats late, is it ok to exercise him afterwards? (I'd exercise him first, but then he ends up eating right before bed, which is a bad idea since I know he'll have to go pee/poo after we go to bed for the night).
How much, if any, physical activity is ok for a dog right after eating?
i'm similiar....i think w/a GSD the risk just isn't worth it. i exercise luc/teagan before meals, and for when i run luc i try to not feed for 2-3 hours after a run. walks for teagan are a far more sedate affair, and i wait 30-60 minutes before feeding, but i also only feed at night and the pre-dinner/bedtime walk is a fairly low-key one.

Some people also recommend a 30 minute buffer BEFORE feeding, as well. Seems pertinent. since my dogs don't get fed until they're calm, and that takes several hours for them to manage after play/walks, it's pretty easy.
I exercise in the A.M. before their morning meal...I wait approximately 1/2 hour or until they are cooled down prior to feeding. After eating, I also follow at least a two hour rule for hard exercise/exciting activities. I'm especially paranoid because my older GSD has digestive problems to begin with. Bloat is my biggest fear!
My vet told me no exercise for one hour before and two hours after a meal. This is especially important if you only feed once a day. Feeding two smaller meals a day can reduce the risk of bloat because the dog isn't so full.
My dogs are on two smaller meals a day, I follow the above rules rigidly, however, I if like me you live in a small town or city it's okay to go for a stroll around the block 30mins after supper, as long as he is on the lead, and it is just a stroll to clear his head ( or bowels).
