They do want to check her, but when I am trying to take her to the car she completely freaks out, starts shaking, struggles and urinates all over the place. Will likely throw up, get car sick

Personally I wouldn't rush off to the e vet then unless something else changes to tell me the dog is in distress. Since they're open 24/7 and otherwise your dog seems otherwise healthy/normal I would it as a flag that something *may* be wrong but not as a certainty that something *is* wrong.
Once you've decided that something is certainly wrong. Pick her up and put her in the car. http://www.petalert.com.au/faid/fa3b.php If she panics when you pick her up you can improv a temp muzzle out of a leash.
maybe next time. I am not sure I am qualified to sedate a sick animal. she is trying to steal food from the cats. would she be doing that with internal bleeding? don't think so.
all our training to waste. it'll take months to make her accept the car again.

Do you have valium in the house? Or can someone get it from the vet? I mean, of course, as Debbie said, IF the vet says it's a safe plan.
If your in doubt, now or in the days to come, does your vet hospital make house calls? I know you are a distance, but perhaps
your vet, or another vet at the hospital will travel, between hours.
My MIL's Rottie had pale gums but no visual signs of bleeding in pee or poop, but his stomach was rock hard and had filled with blood and fluid.
Now he was VERY sick, so we had the vet come to the house and paid the extra fee. These were his last days and he went from super happy to super sick in 3 days. So not trying to scare you or anything, just something to check for. From the sounds of it your pup isn't displaying any of the signs that he did.
