When I make it I dehydrate it in the oven at a low temperature. I think that leaves a lot of the nutrients compared to high heat.
Preheat oven 250
-cut calf liver into thin strips and then tiny pieces (if treats)
-put liver in warm water on stove, bring to boil, then simmer 3-5 minutes
-dry liver on paper towel
-place on oiled baking sheet in single layer
-bake 2-3 hours until liver is throughly dry

Radar has decided after eating raw chicken liver for about a week that he doesn't like it anymore. My batch may have turned bad before we got through it, so I'll try it next time I buy, but I had to boil his and now he's happy as a clam to accept his 'special' treat. It's also great for hiding his pills so that I don't have to bring out the peanut butter (yuck).
I was feeding raw liver alone, and then decided to mix it in with his daily dose of alfalfa and kelp (thanks LB!) and he immediately picked it out, turned up his nose, would only gum at it. Not sure if that has anything to do with it, but it was frustrating!
