Should I be breaking up the bones more?
They'll do that: Scarf down anything that fits, and re-eat it if it doesn't stay down the first time.
This is just me, but I do chop the wings in half. I use backs and necks much more because they happen to have such slidey soft bones. But I know lots of people who feed lots of wings.
If you are there when he eats, and if you aren't feeding anything really big and hard (like legs), then MHO is that he will be just fine.
You're posting to a board with a lot of raw and THK feeders, so I'm sure that if anyone has different advice, they'll post it.

I'm not puppy-experienced. However, I have seen in friends' puppies and in my own adult dogs that energy level (and growth rates, in puppies) can really affect the food amount needed.
